Pursuant to European regulation 1169/2011, food sector operators are required to inform customers about the presence of allergens in the dishes served on their menu.

The complete list of allergens is specified below

Pursuant to European Regulation 1169/2011, there is an obligation for food sector operators to inform customers about the presence of allergens in the dishes served on their menu.

LIST OF ALLERGEN INGREDIENTS:

  • Cereals containing gluten (i.e. wheat, rye, barley, oats, spelled, kamut or their hybridized strains) and derived products, except:
    • wheat-based glucose syrups including dextrose, and derivative products, as long as the process undergone does not increase the level of allergenicity assessed by EFSA for the basic product from which they are derived;
    • maltodextrin based on wheat and derivative products, as long as the process undergone does not increase the level of allergenicity assessed by EFSA for the basic product from which they are derived;
    • barley-based glucose syrups;
    • cereals used for the manufacture of distillates or ethyl alcohol of agricultural origin for liqueurs and other alcoholic beverages.
  • Crustaceans and derived products.
  • Eggs and derived products.
  • Fish and derived products, except:
    • fish gelatin used as a support for vitamin or carotenoid preparations; gelatin or isinglass used as a fining agent in beer and wine.
    • Peanuts and derived products.
  • Soybean and derived products, except:
    • refined soybean oil and fat and derived products, as long as the process undergone does not
    • increase the level of allergenicity assessed by EFSA for the basic product from which they are derived;
    • natural mixed tocopherols (E306), natural D-alpha tocopherol, natural D-alpha tocopherol acetate, natural D-alpha tocopherol succinate based on soy;
    • vegetable oils derived from soy-based phytosterols and ester phytosterols;
    • vegetable stanol ester produced from soy-based vegetable oil sterols.
  • Milk and derived products, including lactose, except:
    • whey used for the manufacture of distillates or ethyl alcohol of agricultural origin for liqueurs and other alcoholic beverages;
    • lactitol.
  • Nuts, i.e. almonds (Amygdalus communis L.), hazelnuts (Corylus avellana), common walnuts
  • (Juglans regia), cashew nuts (Anacardium storico), pecan nuts (Carya illinoiesis (Wangenh) K. Koch), walnuts of Brazil (Bertholletia excelsa), pistachios (Pistacia vera), Queensland nuts (Macadamia ternifolia) and derived products, except nuts used for the manufacture of distillates or ethyl alcohol of agricultural origin for liqueurs and other alcoholic beverages.
  • Celery and derived products.
  • Mustard and derived products.
